           Egg Biryani / Mutta Biryani
Egg biryani / Mutta Biryani recipes is quite faster than other types of biryani like chicken biryani or Mutton Biryani but the rice retain the same flavor. Egg is quite nutritious and packs a protein punch, the egg whites are very lean and rich in protein content and the egg yolk provide the body with the needed essential fats and minerals.

                        Ingredients:
* Oil.                                              1 tbsp
* Basmati rice                              1 cup
* Water.                                         1 1/4 cup
* Cumin seeds.                            1 tsp
* Black cardamom.                     2
* Bay leaves.                                3
* Cloves.                                       5
* Black pepper.                            5
* Javetri.                                       1
* Cinnamon stick.                        1
* Finely chopped onion
* Ginger garlic paste.                   2 tsp
* Turmeric powder.                      1/4 tsp
* Coriander powder.                     1 1/2 tsp
* Yogurt / curd.                             1/2 cup
* Red chili powder.                       1 tsp
* Garam masala.                          1/2 tsp
* Biryani masala.                          1 tsp
* Green chilies.                             2
* Chopped coriander leaves.     1/2 cup
* Chopped mint leaves.              1/4 cup

                       Egg preparation:
* Boiled eggs.                               6
* Oil.                                              1 tsp
* Red chili powder.                      1/2 tsp
* Biryani Masala.                         1/2 tsp

                  For Egg Biryani Layers:
* Saffron water.                           2 tbsp
* Biryani masala.                         1 tsp
* Coriander leaves.                      1/4 cup
* Chopped mint leaves.              2 tbsp
* Fried onions.                             2 tbsp
* Ghee / clarified butter.             2 tbsp

              Egg Biryani Preparations:
Step 1:
Wash rice well under cold water and soak rice in enough water for 30 minutes.
Step 2:
Heat oil in a pan.
Step 3:
Once oil is hot add cumin seeds and whole spices javetri, black cardamom, cinnamon stick, cloves, black pepper, bay leaves and mix well.
Step 4:
Once whole spices start to pop, add onion mix and cook till onion gets little browing around the edges.
Step 5:
Add ginger garlic paste, turmeric powder, coriander powder,  mix and cook for 2 minutes.
Step 6:
Add yogurt and mix well.
Step 7:
Add green chilies, red chili powder, biryani Masala, garam masala and mix well.
Step 8:
Add soaked and drained rice in to gravy, mix well.
Step 9:
Add water, salt and mix well.
Step 10:
Bring to a boil.
Step 11:
Once the rice comes to a boil, lower down the heart to medium , cover and cook till most of the moisture is been absorbed in the rice.
Step 12:
Cover and simmer on a very low heat for 15 minutes.

               Masala Egg Preparations:
Step 1:
Take boiled eggs and make some gashes around boiled eggs.
Step 2:
Heat 1 tsp of oil in a pan, to that add eggs.
Step 3:
Roast eggs for 4 to 5 minutes or until you see eggs start to get little browing.
Step 4:
Season eggs with chili powder, biryani Masala and salt mix well.
Step 5:
Cook for 2 more minutes.

                     Layering Biryani:
Step 1:
Once rice is cooked, put in Masala egg in cooked rice.
Step 2:
Fluff up the rice to cover the eggs in.
Step 3:
Sprinkle some biryani Masala.
Step 4:
Add some saffron water.
Step 5:
Add coriander leaves and mint leaves.
Step 6:
Also spread some Fried onions.
Step 7:
Add 2 tbsp of ghee or clarified butter.
Step 8:
Cover and simmer on low heat for 10 more minutes.
Step 9:
Serve hot with raita, carrot raita and mint chutney.
