Keema Biryani or Mutton keema Biryani
Keema Biryani or Mutton keema Biryani is a sublet spiced Biryani that combines perfectly cooked, flavoured minced meat with Indian. spices and long grain, aromatic biryani rice. If you do not prefer on the meat, then this biryani will definitely excite you.
Ingredients:
* Rice. 500 gr
* Almonds. 1 cup
* Raisins. 5-6
* Yogurt. 1 cup
* Desi ghee. 2 tbsp
* Sliced onions. 1 cup
* Garlic paste. 1 tbsp
* Ginger paste. 1/2 tsp
* Coriander powder. 2 tsp
* Red chili powder. 1 tsp
* Lamb keema 1/2 kg
* Milk. 1 glass
* Butter. 50 gr
* Rose water. 1 tsp
* Mint leaves. 1 handful
* Finely sliced ginger. 1 piece
For the Garam masala:
* Cumin seeds. 2 tsp
* Coriander seeds. 2 tsp
* Green cardamom. 3-4 pods
* Black cardamom
* Cinnamon sticks. 3-4
* Mace. 2 tsp
* Black pepper. 1 tsp
* Cloves. 5-6
* Water
* Salt
Preparations:
Step 1:
Wash and soak rice in water for 30 minutes.
Step 2:
Dry roast cumin seeds, coriander seeds, green cardamom, cinnamon, mace, black pepper and cloves. Cool and grind to a fine powder.
Step 3:
Blanch almonds in water, peel and cut them into small pieces. Chop raisins finely. Heat desi ghee in a pan and add sliced onions. Cook on low heat.
Step 4:
Whisk yogurt, garlic paste, ginger paste, coriander powder, black cardamom and red chili powder and add it to the onions. Cook for two minutes.
Step 5:
Add lamb keema and saute. Add salt and garam masala. Cook for sometime.
Step 6:
Add a cup of water and allow it to simmer. Transfer the keema to another pan. Add milk, butter, almonds and raisins.
Step 7:
Boil the rice. Add rose water and salt and stir.
Step 8:
Put half of the rice into the pan. Add some mint leaves and ginger.
Step 9:
Put rest of the pan on top and then the rice.
