                         Paneer Biryani

Paneer Biryani is quick and easy recipe. Yet it is a delicious meal. This is a satisfying meal and it serves as a great lunch box recipe. If you don't have the vegetables at hand you can skip it, it will not alter the taste of the biryani. You can serve it with raita or gravy by the side.

                       Ingredients:
Onions sliced thinly.                  2
* Aged basmati rice.                   1 1/2 cups
* Oil.                                              1 tsp
* Salt to taste
                         Marination:
Ghee ( or) oil.                             2 tbsp
* Paneer cubes.                           1 1/4 cup
* Yogurt/ curd.                             1/2 cup
* Homemade biryani
   Masala powder                          1 tsp
* Ginger garlic paste.                   1 tbsp
* Turmeric powder.                       1/4 tsp
* Red chili powder.                        ½ to ¾tsp
* Salt to taste
* Fried onions.                              2 tbsp
Finely chopped mint leaves.    2 tbsp
* Finely chopped coriander leaves- 2tbsp
* Green chili.                                  1
Bay leaves.                                  1
* Green cardamom.                      4
* Black cardamom.                       1
* Cloves.                                         6
* Cinnamon sticks.                       3 inch
* Mace.                                          1 strand
Star anise.                                  1
* Shahi jeera.                                1/2 tsp
* Kewra water or rose water.       1 tsp
                          Garnishing:
* Few Fried onions.
* Capsicum chopped or few cashew nuts.
* Few paneer cubes.
* Mint and coriander leaves.
                          Preparations:
Step 1:
Add oil to a heavy bottom pan, fry onions till golden brown. Set these aside. Fry capsicums till they turn slightly soft. Fry few paneer cubes or cashew nuts as well. Set these aside.
Step 2:
Marinate paneer with the marination ingredients and set aside.
Step 3:
Add 1 tsp oil to water and bring it to a boil, add the rice and cook till al dente. Drain off the rice and set aside.
              Making Paneer Biryani:
Step 1:
Add the marinate to the same heavy bottom pan.
Step 2:
Layer the cooked rice over the paneer marinate. Level the rice. Add few more Fried onions and mint and coriander leaves. Then sprinkle fried onions, capsicums kewra or rose water.
Step 3:
Seal it with a foil or a moist clean kitchen cloth. Place the lid over it. Meanwhile heat a old tawa or griddle.
Step 4:
When it is hot, transfer the biryani pot or pan on the hot tawa. Cook for 5 minutes on a medium flame.
Step 5:
Switch off the stove and leave it undisturbed for ate least15 minutes.
Step 6:
Garnish with fried cashews or fried paneer mint leaves and fried onions.
Step 7:
Serve  Paneer Biryani with raita.
